Solyanka — Quick 1-Hour Recipe(Russian Soup)😋 A traditional Eastern European soup with a rich, smoky and tangy flavor. Ingredients: • Meat or veggie broth - 2 L • Sausages, smoked meats + 2-3 types of your favorite meat (300–400g total) • Olives 150g • Pickled cucumbers 150g • 2 limes or lemons • 2-3 potatoes • 1 carrot • 1 onion • Tomato paste • bay leaf 2-3 pcs • Dill or parsley • Salt, pepper - to taste Instructions: 1. Grate the carrot and finely chop the onion. Saute for about 5 minutes until golden. 2. Add chopped smoked meats and sausages. Cook for another 7 minutes to develop the classic smoky flavor. 3. Add olives, pickles, and tomato paste. Mix well and let the solyanka mixture simmer for 10 minutes. 4. Boil diced potatoes in a pot with broth. Add salt, pepper and a bay leaf. 5. Transfer the sautéed mixture into the pot and combine everything. 6. Add lime (or lemon) slices and squeeze the juice of one lime for a bright, tangy finish. 7. Stir in chopped dill or parsley. Turn off the heat and let the soup rest for 15 minutes - this helps the flavors blend perfectly. 8. Serve hot with fresh herbs and a spoon of sour cream.
